Ingredients

  • 2 lbs fresh broccoli, cut into bite-sized florets (about 7 cups)

  • 1 cup roasted cashews (halves or pieces)

  • 6 oz of cooked, crumbled bacon

  • ½ cup dried cranberries or raisins

  • ¼ cup finely chopped red onion

  • 1 ½ cups mayonnaise

  • ¾ cup granulated sugar

  • 3 tsp apple cider vinegar

Directions

  • Prep the Veggies: Wash and thoroughly dry the broccoli.
  • Chop it along with the red onion and place them in a large bowl.
  • Mix the Dressing: In a separate small bowl, whisk the mayonnaise, sugar, and apple cider vinegar until completely smooth and blended.
  • Combine: Pour the dressing over the broccoli mixture and toss to coat completely.
  • Chill: Cover and refrigerate for several hours or overnight so the flavors can marry.
  • Serve: Stir in the cashews just before serving so they retain their signature crunch
