Ingredients
2 lbs fresh broccoli, cut into bite-sized florets (about 7 cups)
1 cup roasted cashews (halves or pieces)
6 oz of cooked, crumbled bacon
½ cup dried cranberries or raisins
¼ cup finely chopped red onion
1 ½ cups mayonnaise
¾ cup granulated sugar
3 tsp apple cider vinegar
Directions
- Prep the Veggies: Wash and thoroughly dry the broccoli.
- Chop it along with the red onion and place them in a large bowl.
- Mix the Dressing: In a separate small bowl, whisk the mayonnaise, sugar, and apple cider vinegar until completely smooth and blended.
- Combine: Pour the dressing over the broccoli mixture and toss to coat completely.
- Chill: Cover and refrigerate for several hours or overnight so the flavors can marry.
- Serve: Stir in the cashews just before serving so they retain their signature crunch
