Ingredients
2 10-ounce packages of frozen broccoli (I usually use fresh)
2 cups sliced cooked chicken or Turkey (or more if you want) (usually use a rotisserie chicken)
2 10 1/2 ounce cans condensed cream of chicken soup
3/4 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon curry powder
1/2 cup shredded cheddar cheese (or more if you want)
2 cups or so of cubed bread crumbs to cover cheese
Directions
- Cook broccoli till tender, drain well.
- Arrange stalks in a greased 12 x 7 1/2 x 2 inch baking dish.
- Layer chicken on top.
- Combine next 4 ingredients, pour over chicken.
- Sprinkle with cheese.
- Top with cubed bread crumbs (fairly small cubes).
- Bake at 350 about 40-50 minutes or till heated through.
- Alternative: Cover the casserole with foil for about 1/2 hour and then put the bread crumbs on afterwards and continue cooking for another 15 minutes or so until the crumbs are brown.
