Ingredients

  • 2 10-ounce packages of frozen broccoli (I usually use fresh)

  • 2 cups sliced cooked chicken or Turkey (or more if you want) (usually use a rotisserie chicken)

  • 2 10 1/2 ounce cans condensed cream of chicken soup

  • 3/4 cup mayonnaise

  • 1 teaspoon lemon juice

  • 1 teaspoon curry powder

  • 1/2 cup shredded cheddar cheese (or more if you want)

  • 2 cups or so of cubed bread crumbs to cover cheese

Directions

  • Cook broccoli till tender, drain well. 
  • Arrange stalks in a greased 12 x 7 1/2 x 2 inch baking dish.
  • Layer chicken on top. 
  • Combine next 4 ingredients, pour over chicken.
  • Sprinkle with cheese.
  • Top with cubed bread crumbs (fairly small cubes).
  • Bake at 350 about 40-50 minutes or till heated through. 
  • Alternative: Cover the casserole with foil for about 1/2 hour and then put the bread crumbs on afterwards and continue cooking for another 15 minutes or so until the crumbs are brown.
